Main dish with Mix of Mushrooms 🍄
📍100g of Mix mushrooms
📍50g chickpeas and
📍4 Carrots
📍1 tbsp Peanut butter
📍Hand of Raisin
📍Top up with Pecan nuts
Preparation
Cut the carrots into pieces, put them and the chickpeas on a tray. Add the spices that you want, I used paprika, turmeric and black pepper. Put it in the oven for 35/40 min (I love them crispy!)
During this time, cooked the mushrooms in a pan.
Once everything is ready mix it in your plate and add nuts and raisin (for the sweetness) and the tbsp of peanut butter (almond butter and tahini works too).
